Is there a way I can skip the vocals and just play the guitars and the drums. Everytime I go to Solo, it asks for the microphone and it won't let me continue.

Start the game using an instrument, not the standard controller. The controller is associated with the mic.

Do you have a guitar or drum plugged in? If so, you need to use that to navigate the menus into the solo career for the instrument you want to play.
