My guess is yes, eventually. Probably in a similar way to Guitar Hero II coming to 360. It won't come for a while (6 months approx. I'd say) but it'll iron out a few bugs and come with bonus tracks (which will more than likely be available for download on the other platforms anyway). I'll be getting both a Wii and a 360 eventually, I'll be getting Rock Band for 360 though, purely for a better online experience.
