I really am convinced that they just lost/never printed the stack of labels from the first few days. I submitted my RMA on 11/20. After no activity on the UPS or EA site since then, I submitted a second one on Tuesday. Just got the second RMA replacement guitar today, and the first one still is sitting at "billing info received".
For anyone who has been told that UPS just doesn't update their site, that's a lie. Packages are constantly scanned at every point along the way. I watched my package travel cross-country from Louisville, KY. Sure, sometimes there are blips. But fundamentally, they are constantly updating their tracking status, regardless of holidays or whatnot. It's all automated.
So if you're waiting on an early RMA, I strongly suggest you just cancel it and place a new one. No harm done.

I got my RMA on 11/20 at 10AM, and just yesterday (Thurs.), the EA support site updated my status to Parts Shipped. I don't have the UPS # here right now to see if it has been updated, although I'm pretty sure everyone else who's status said Parts Shipped really did get their stuff shipped.

I haven't heard crap on mine either still says billing info recieved and no shipment, I'm calling later on when they open and snapping out, I want a replacement guitar by monday or I'm shipping the whole thing back to them for a refund, these lies are getting old fast off EA. They did the same thing about Tiger Woods 08, lied for days after releasing a game that didn't work....They are also deleting posts o here of those complaing about not getting replacements which is BS. Those of us who ordered early shouldn't be getting the shaft like we are.

I wouldn't bother calling. I was in the same boat as you are, and all that did was p*** me off even more. When I called all they did was lie to me and put me on hold to come up with new lies. I ended up ordering a new on in my husbands name wednesday and it gets here today. I called and canceled the RMA for the one I ordered on Thanksgiving. Of course the guy on the phone told me they couldn't cancel. So, I reminded him of the fact that in America we have rights and that they couldn't force me to take anything. Then he transferred me to a supervisor and I got it canceled.
