Just thought I'd represent some bands and songs I like that I think would be great in Rock Band.
The Mad Capsule Markets
Great band in general for Rock Band because the bass player is the 'leader' (therefore good bass sections), the drumming is fast and punky, the vocals switch between growls, singing and a sort of rap style. Many songs are injected with a Drum and Bass vibe which I think would bring something refreshing to the drummers palete. I guess the only problem is that they're Japanese and some songs will include Japanese lyrics :P

Good Girl - Perfect song for Rock Band in my opinion, fast drums and great upbeat (and mostly english) vocals (including a nu-metal style 'rap' in Japanese... great fun :D) with some catchy guitars.
Orphaned Land
Would be brilliant for this game. Lots of clean singing along with some really deep death style growls. The middle-eastern folk tinge to the music would set it apart from other bands and some of the instruments they use would be really fun to simulate. Pretty technical playing too, mixing great parts for all instruments.
Song example
Halo Dies - A showcase of many styles of metal, starting with a sort of classic feel then incorporating some middle-eastern folk, death metal and finally some interesting time signatures. Great mix of singing and growling too.
To be honest the whole Mabool album should be made available, it's a classic.
Kalmah
Strangely groovy Melodic Death Metal with their The Black Waltz album (their best imo), so many great songs off this album it should be released in full! Cool bass, insane guitar solos and drumming as well as brutal vocals. Of course the vocals are a slight problem with their latest stuff because they're monotone low, but the technicality of the other instruments makes up for it. Not saying vocals are bad, they're just pretty easy if you can get the right note ;)

To the Gallows - I made this myself on Freetar Hero (although someone made it before me too) and it works brilliantly. If only you released a Keyboard with the game too ;) As with Orphaned Land's Mabool, this could be released in full.

Wintersun - Death and the Healing (Crazy solo from hell)
Dir en Grey - Ryojoku no Ame (Very bassy, fun guitars and of course Kyo is the master of vocals. Any Dir en Grey would be extremely difficult for the vocalist, not just because the lyrics aren't English. Anything from their new album The Marrow of a Bone would be great)
Dark Tranquillity - Anything from Character (My favorite band, Am I 1? works well, I made that on Freetar Hero too. Character is a great album and there are many candidates)
Children of Bodom - Sixpounder or Bodom Beach Terror (Anything from Follow the Reaper or Hate Crew Deathroll would be awesome.)
Amon Amarth - Death in Fire
