Dream Theater have covered entire albums:

Number Of The Beast - Iron Maiden
Made In Japan - Deep Purple
Dark Side Of The Moon - Pink Floyd

They are all pretty good, but I adore the DSOTM cover. You would think it would be untouchable, but Dream Theater do a pretty damn good job of covering it.

Primus used to do a great cover of "Thieves" by Ministry.

Mastodon's cover of "The Bit" by the Melvins is pretty good.

And the Melvins' cover of "Lexicon Devil" by the Germs was pretty good.

Cover is somewhat exact, but Petrucci simply fails at playing guitar. He can do his own speedy stuff pretty good but when it comes to emotions, he is clueless, and Gilmour is all about emotions. This is among the worst guitar covers I have ever seen from a professional player.
Not to mention some Comfortably Numb cover, in which he f***ing shreds! In Comfortably Numb! He has no taste whatsoever.

Never knew that Maiden did a Rosalie cover, and Diamonds and Rust is probably my all time favorite cover.

In addition to those some other good covers are Cream and Molly Hatchet's respective covers of Crossroads (or is it Crossroad Blues?) and Metallica did a good job with all the Mercyful Fate and Diamond Head covers.

Edit: almost forgot Maiden's cover of King of Twilight that was in my opinion the best of their covers.

I thought most of Maiden Heaven was pretty weak, but Black Tide's cover of Prowler (http://www.youtube.com/watch?v=7tQkoK08t7w) is awesome.

On the topic of Maiden, their cover of Jethro Tull's Cross Eyed Mary (http://www.youtube.com/watch?v=Qjfkh7s7rGk) is another favorite of mine. B-side to the Trooper... what an awesome single that was!

Actually, Sevendust covered Johnny Cash's cover of Hurt. It was a tribute to Cash after he died. They did a damn good job with it, though.

I heard Age of Electric do this song in the early 90s in a bar in Calgary, it was great.
