We definitely need some System of a Down, preferably the older stuff ("Chop Suey!", "Sugar", "Suggestions", "Peephole", etc.). Watching some of the custom songs people have made for Guitar Hero II made me want to play some System of a Down even more.
We also need some Rammstein - imagine trying to sing in German! I think "Mein Teil" would be very awesome, as would "Reise, Reise" and "Du Riechst So Gut". Obviously "Du Hast" would be the only song anyone would know, so you might want to throw that in also.
Other bands that have some truly awesome songs that should be in Rock Band (and that I would instantly purchase) would be Chevelle, Disturbed, Lacuna Coil (gotta get some more female singers, after all), Korn, and Deftones (their version of Simple Man is pretty sweet).
I also really enjoy the off-the-wall stuff like "Timmay!" from South Park, and "Trogdor" and "Thunderhorse" in GH2. I also enjoy the stuff from relatively unknown or "not-yet-popular" bands. I think "Blue" by The Birthday Massacre would be great (again, another female singer), and also "Mushroom Cult" and "Darkest Days" from Dog Fashion Disco.
There's so much good stuff out there - it must be hard to decide what makes the cut.
