I know there are dozens of other metal related threads, but most of them are related to either specific bands (ie the 30000 Megadeth threads), styles of metal I don't really enjoy (ie the 30000 Slipknot threads), or lump a bunch of different styles of metal together (ie the LET'S PUT SLIPKNOT, CHILDREN OF BODOM, AND KREATOR ON ROCKBAND!!!!1!!one!!! ZOMG threads).
*no offense intended in the above*
Metallica, Maiden, and Sabbath were a good start, but we need more METAL!!
Anyway, here are some suggestions that I think would be really fun to play on Rock Band. I'm going to avoid any "cookie monster" vocals in this set of suggestions. Please avoid debates of whether or not you find these bands metal. Most of these would be really cool if somehow they could also add rhythm guitar parts (Rock Band 2 anyone?) for some of the dual-layered sounds and trade-off solos. The suggested songs aren't what I feel are necissarily their best songs, but the songs that will best fit Rock Band in both difficulty, fun, and balance of parts. I'm also going to avoid Megadeth, Pantera, and a couple others I have seen pop up all over the place.

Nevermore
Everyone knows deep down inside they want to shred some Jeff Loomis solos and sing like Warrel Dane.
Suggested songs:
The River Dragon Has Come
No More Will

The Sword
These guys are freaking awesome. Plus we need some Norse-oriented lyrics!
Suggested songs (Freya on GH2, so not listed):
Winter Wolves
Iron Swan (even some mic tapping in this one!)

Mastodon
Suggested songs:
Blood & Thunder
Workhorse

Slayer
Suggested songs (avoiding controversial ones):
Seasons in the Abyss
Necrophobic

Nevermore would be totally sweet. My Acid Words, Sentient 6 and Born would all be sweet. Loomis owns.
