How many iterations are there of each of the instruments?
I hear there are 3 types of drums and guitars. I haven't heard of different microphone types, yet. I also read there are 2 different types of sticks (one that has a weaker type of wood, or something.)
Also, how can I identify which model type I have so that I know I'm getting the model type I want as a replacement? Does anyone know the dates Harmonix started making the second type of guitar, drums, etc so that we can all identify which kind we have...
Thanks in advance.

As far as I know, there is really no way of telling unless you open the instruments up. Maybe this will help with the guitar:
I purchased 2 copies of Rock Band so I didn't have to lug everything between gigs . I just wanted to leave a set at a friends house.
First box (purchased 11/29): My strum bar had a lot of play on when I first pulled it out of the box. It broke after about 4 hours of use. I opened it up and there was no "rubber band" areas for the rubber band fix you may have seen. Also it was using little trigger switches to signal the strums (like a light switch). Returned that.
Second box (pre-ordered on Amazon and just received it 12/13): Strum bar feels a lot more solid. I haven't used this one yet since I think I may sell it since I already have 2 GH guitars and a Rock Band guitar.
On a side note, on my replacement model, The fret buttons sound like a horse walking on a marble floor. Very lound "click clack" while pressing them down, but they work. On my second guitar from my second bundles, they are very quiet.
As for the manufacture dates on the box, both of them were manufactured in late October. The exact dates escape me but that was one of the first things I looked at when I received my new bundle because I thought I was going to have the same problems.
Hope that sort of helps. If not, carefully open the instruments up and take a peek inside. It isn't very hard.

Won't I void my warranty if I open my instruments up?

Yeah, but what EA doesn't know won't hurt them.
