According to Wiki (http://en.wikipedia.org/wiki/Birthday_(The_Beatles_song)), the backing vocals for Birthday are sung by not just John and Paul but also Yoko and Pattie Boyd. It's obvious that Harmonix is paying great attention to detail, so why aren't the two in the dreamscape? Is it because they don't want themselves represented? From what we know, Yoko is fully backing TB:RB. Not sure about Pattie, but they could at least put Yoko in, she sang in a handful of the White Album's songs...
explanations?

Because it's JUST The Beatles.

Same reason Clapton and Preston won't be in the game, various orchestras won't be in the game, etc. This is a game focusing on The Beatles - not every single person that touched the recording process for their songs.

It does beg the question as to what they're going to do for the Continuing Story of Bungalow Bill.

You do have a point, this is THE BEATLES, all others are miniscule compared to them.
As for Bungalow Bill, where Yoko had a one-line singing part, it just wouldn't be right to see John sing in that high-pitched squeaky voice :P

The game is an idealized vision of the Beatles. The four probably never jammed out Birthday as shown in the studio either.

You could either have one of them be seen singing the part (which wouldn't seem THAT weird to me - I've sung the part all along with the rest of the song for decades), or you just have the animation focusing on Ringo's drumming, George's guitar, crazy dreamscape object/scene X, etc. You don't HAVE to show every lyric being sung in the song.

Yeah, they can program the game camera to cut away from the singer for any non-Beatle vocal. I bet they could have it be completely non-lipsynced if they really wanted to.
