Remember, this shouldn't just be your favorite songs, these should be songs that will have interesting things to play in all four parts. It's a game after all, it should be fun even for people who have never heard the song before.
Here's a few of the tracks I'd like, feel free to add yours of course, and explain why you want those particular songs (and a sample would be nice, if possible, so we can hear what you're talking about).
Incubus - Dig (http://www.youtube.com/watch?v=j9l17XR74Ts) or Anna Molly (http://www.youtube.com/watch?v=vCI6qXOEHPM)
These are singles off their newest album, so they may be a little expensive to get the rights for. I know these are still relatively guitar heavy, but I think the other parts are complex and varied enough to not get tedious, even the bass part. The drums particularly get a lot of variety, and both are fun to belt out without being impossible range wise for the average person.
Phil Collins - In the Air Tonight (http://www.youtube.com/watch?v=Gz7gajAb2ww)
Something from the 80's that isn't hair metal! This isn't a particularly technical song to play probably, but come on, you have to know why I'd want to play this song. Especially with a game that features an electronic drum set. DADA DADA DADA DADA DA DA DOO. Please! You wouldn't have to include any other tracks, I'd buy the drums just to do that. You don't even have to do the whole song, just that part over and over again. ;)
I'd love the Beatles, but seeing as how they're not even on iTunes yet, I'm not holding out any hope.
Arctic Monkeys - A Certain Romance (http://www.youtube.com/watch?v=LJO1DxEWaD8)
All the parts have a chance to shine in this, and you get to sing in a British accent, what's not to like? :)
Gorillaz - El Manana (http://www.youtube.com/watch?v=DEB7i8bSwNA)
I know, another single, but I love the drum part. I really doubt I'd ever be able to play it on expert, but it would sure be something to see when someone does. You might have to fudge the definition of "Guitar" though to have a fun part.
K-Os - Crucial (http://www.youtube.com/watch?v=V_hiJc9fCgY)
This one is a little more obscure, you may have to find "other" ways to hear the studio track. I've linked a live, unplugged type version that's down tempo and has tablas for the drum part (Which, even though the interface would be really wrong with the current drumset, would be really cool to have in Rock Band. Maybe Rock Band 2...). It's a cool reggae-esque song, and is a sound that has been missing from music games in general.
RHCP - Soul to Squeeze (http://www.youtube.com/watch?v=XgVDH7PkR_8)
One song where I'd actually play the bass part before any of the others, I love the way it sounds. Also one of my favorite karaoke songs, I can't help but sing along in the car.
Porno for Pyros - Tahitian Moon (http://www.youtube.com/watch?v=YHI_sONyXY8)
The video kind of sucks, but this is one of my favorite songs from the 90's. Again, great parts all around. If the name doesn't pass the PG-13 you could always make it from "PFP". :)
