Is it just me or is the Mellotron charted to the guitar track for part of or all of Lucy in the Sky with Diamonds?

other instruments are charted to the guitar/bass track all the time in rock band and the Beatles rock band so yea every instrument has to have a part to play so they chart different instruments to guitar/ bass track

I don't think so, I've played the song on real guitar, and the chart seems to correspond to the song.

In the actual song, I'm afraid to say it is a synthesiser - most likely a Mellotron, the most common synth used in Beatles tracks.
That said, it is quite playable on guitar.

I don't recall other instruments in the regular Rock Band and Rock Band 2. Won't Get Fooled Again could have had synth/organ charted to guitar, and Baba O'Riley could've had synthesizer charted to guitar.

The opening of "Lucy in the Sky with Diamonds" was played by Paul on a Lowrey organ.

Seriously? I was able to imitate it almost perfectly with a shotty training amp and a Strat copy.

I can think of a few DLC songs off the top of my head that have non-guitar parts charted to guitar for part of the song (or all of it in the case of Saucy Jack):
"Smokin'" by Boston (organ)
"Saucy Jack" by Spinal Tap (synth)
Couple of NIN songs (I think "The Collector" and "March of the Pigs") (synth)
"Sin Wagon" by Dixie Chicks and I think the Dierks "Free and Easy (Down the Road I Go)" (banjo)

I don't have any of those, but banjo for guitar makes sense I suppose. I don't mind charting non-guitar to guitar if it's done right. GH3 had sitar charted for Paint It, Black.
Maybe I can get Good Vibrations with electro-theremin charted to guitar?

Charlene is another one. HMX charted synth to guitar for the first half of the song, before it goes into the epic guitar 'solo'.
We are also forgetting that the strings are charted to guitar in I Am The Walrus.
