That depends on a few things, such as:
1) How good you are at drums IRL
2) How good you are at rhythm games
You probably want to start at Medium just to get used to matching up the game screen to what you're actually playing. It's a little hard to adjust to playing drums along with little bars scrolling down a screen, but eventually it'll become second nature.

Kind of an open-ended question, but I'll try to answer.
I've been playing drums for 21 years. I was almost incapable of playing on medium when I first opened the box, simply because... knowing I was "playing along" with the drum track made me throw in extra notes that weren't on the screen.
So, first off.. the drums are FUN. Bottom line, they do what they are supposed to.. they entertain.
However, I don't play on expert because of the arbitrary nature of the drums. Songs like "run to the hills" on expert are very hard for me, though if an Iron Maiden cover band asked me to play drums for them I'd be able to play an excellent rendition of that song on a real drum kit.
The bottom line is, as a "real" drummer.. when I've played cover songs in the past I didn't use sheet music or study the individual drum track for days.. I just listened it, played the same beat, and hit similar fills in the parts where the drums had fills.
In rockband.. you are playing the equivalent of "exactly" what the real drummer played... but on four pads / one kick.
don't worry about how "hard' it is. It's fun, that's what matters.

I'm a guitarist, but I still screw around with my drummer's kit, and here's the biggest difference for me...no hi-hat. You only have one cymbal pad, so no seperate hi-hat or foot pedal for the hi-hat. For the closed-hat you are just hitting the same cymbal pad. Much easier for me, since I am horrible IRL.

Not to quibble... but that's one of the biggest differences that actually makes the game harder for me. Lol.
On a real kit I can see the "Crash" "Ride" and "Hats". I know which one I'm hitting. In Rockband if I don't know the song... I don't know if those blue notes coming up are ride hits or tom hits.
If I could "mod" one thing on the drum kit it would be taking that damn green pad and raising it about 12 inches or so. I'd be soooooooooooo much faster if it was sitting there level with everything else.
