G'n'R we speculate is on the way. As for Ozzy, "I Don't Know" would be awesome. Good AC/DC list too.
"War Pigs" is available via DLC.
I wouldn't have a single problem with anything on your list tho...add some Night Ranger/Damn Yankees, Def Leppard and Judas Priest and you'd be set!

How about The Decline by NOFX (18 minutes)? That song is actually really awesome too. Do it Harmonix!!
Also, we need some Pink Floyd up in here.

"The Decline" by NOFX would be great as a hidden track...
Here's my list:
Green Day - "Jesus of Suburbia"
WHY:
it comes in over nine minutes. It has plenty of tempo changes and it's a great jamming song.
Fall Out Boy - "This Ain't A Scene, It's An Arms Race"
WHY:
It'd be a great song for vocals, plus you could have some fun with all the tempo changes on the drums and cool little guitar fills.
Thrice - "Kill Me Quickly" & "Deadbolt"
WHY:
These guys don't get enough press but these two songs are metal at its best. "Kill Me Quickly" has a great little guitar outro and the bass part is pretty great too. It's a fast song with a ton of technical guitar work. "Deadbolt" is similiar, lots of little challenging guitar parts, fast drums and great vox.
Strung Out - "Matchbox"
WHY:
Strung Out has it's core fans. This is a band that has great technical guitar work.. another metal/punk band like Thrice with great guitars and fast drums. This song is longer clocking in over four minutes, but it has plenty of great parts.
Sponge - "Molly"
WHY:
This is a classic example of how great Rock Band is, this is a song that would never be good for Guitar Hero but for Rock Band it works great. Plenty of stops in the song, neat little guitar parts and great vocals.
Guster - "The Captain"
WHY: Great vocals, a nice outro of guitar parts to finish the song.
Blink 182 - "Carousel"
WHY: Not enough good bass songs on Rock Band. This song accomplishes that. It has a neat little bass intro plus anyone can sing this song because Tom DeLonge can hardly sing the song.
Jimmy Eat World - "Just Watch the Fireworks"
WHY: Another song that clocks in over seven minutes. Challenging vocals, plenty of good guitar parts and a great song for drumming I would imagine.
Limbeck - "Let Me Come Home"
WHY: I know there's a small place for obscure bands in Rock Band and here's one to consider. This song has some great guitar parts in it. In fact, most of these guys songs are a lot of fun to play on the real guitar, I imagine that could be imitated...
Moneen - "Don't Ever Tell Locke What He Can't Do"
WHY: if Rock Band ever decides to allow for two guitars (lead and rhythm) they should include this song. It's got some great guitar parts and plenty of them. A great bridge! Great drum parts as well and the vocals would be a challenge.
MxPx - "Punk Rawk Show"
WHY: An absolute blast to play in real life. I imagine the sheer speed of this song would make it very difficult to play in the game, but it'd be worth it.
Sublime - "Seed"
WHY: Sublime is fun to sing anyway. This song has plenty of great parts. A guitar solo, lots of tempo changes and another great song to play live. Plus, it's SKA and that means playing off beat...something that you get to do on the second verse of "Say It Ain't So" but that's about it!
Brand New - "Sic Transit Gloria...Glory Fades"
WHY: Great vocals, some talking... Challenging bass part maybe... Lots of tempo changes.
This is just the beginning of my list... I just want to say this game is fantastic.

Would be absolutely amazing to play in Rock Band. After all these years, those last 5 minutes still give me the chills!
And there's even a nice little rest in the middle. Lol! :)
