Does anyone know why on the Drum part (even on expert) they left out the drum roll right before the chorus the 2nd time around? How is this expert if they don't include that? Was this a mistake?

That's not really a drum roll.
Most people don't know this, but Jon's drummer didn't actually know how to play the drums. Jon is just an amazingly talented beat boxer and he literally beat boxed all the drum tracks to every Jon Bon Jovi song (except the soundtrack for Young Guns 2, when they brought in the drummer from Cradle Of Filth) in the studio.
On stage it's all arm-synced.

The drum pads cant register rolls that are that fast because by the time the sticks hit the pad its still vibrating from the last hit

You know I had a similar gripe for vocals in Say it Ain't So by weezer.
They leave out a high pitched Hey in the song right after the line
"This way is a waterslide away from you that takes you further every day...."
I kinda miss it :)

Professional electronic drums (Roland, etc.) can register rolls, but then again I'm sure the electronics behind reading the piezo microphone signal are a lot more sophisticated, too.
But the idea of using a roll as the drummer's version of a "sustained note" is kind of a neat idea.... :cool:

Same here! It's in the vocal track still, just no singing "required" there. Maybe they couldn't figure out what word to put in for that noise he makes there. I just sing it anyways. I kinda sing it like this:
"This waaaaaay isawaterslideawayfrommethattakesyoufurther every dayee-ay...eee"
On topic, I never noticed this, but there are a lot of drum things that veer from the way it should be drummed that I have noticed. Especially in regards to hi-hat open/close, but what can we do about that. Rolls are always inaccurate representations because you just can't roll on those pads very well and I imagine beats too rapid might confuse the sensor. Usually they don't leave things out entirely, but hey, everyone makes mistakes.
Hmmm, I just thought of something. Where there are rolls, they should put in one of those glowing bars (like fill/overdrive release) just on the snare or whatever drum is being rolled on. Maybe it could add points for every detected hit, and require a minimum number of points to be not counted as 'missed'. If counted as 'missed', the points would be lost.

Physic4lGr4fiti answered the question on the third post.
A roll (as in, when the drummer uses stick bounce to get two hits from each hand for 32th notes--or faster) is way too fast for the controller to register accurately and way too difficult for even the expert level to expect any drummer to do perfectly cleanly.
While there are indeed rolls in some of the original master tracks, there are no places in Rock Band where the game expects you to play anything faster than 16th notes.
Despite what the marketing people say, this is not a drum trainer--it's a game. And as a game, it has to make some allowances to be somewhere between real drumming at one end and "Space Channel 5" at the other (like having only one pedal-so fast kick drum work and hi-hat manipulation are not represented).
