Confused about some guitar charting...

There are two examples I'm especially confused about.

1. Sgt. Pepper. During the horns section, you play a bunch of two note chords. I can't figure out for the life of me what they are supposed to be. Is there guitar there that I can't hear?

2. Hey Bulldog. Am I playing piano? Or am I playing a guitar I can't hear?

Not sure about Sgt Pepper, but there's definitely plenty of guitar in Hey Bulldog

I think there is notes that are muted by the horns, remember they can here the isolated tracks and your playing guitar in hey bulldog I think.

The first time the riff is played it's only piano, then they add the guitar and drums. then the bass.

I'm mostly talking about all the chords in Hey Bulldog though.

Those chords are happening on the guitar in Hey Bulldog, but they tend to get drowned out by the piano.
