What does everyone use to record your 360/PS3 Rock Band Rockouts onto your PC? I've been told alot of people use Gamebridge (http://www.amazon.com/Gamebridge-AVC-1400-USB-Cnct-Xbox/dp/B000DLBAFU), but the reviews seem to indicate there is an audio lag issue. so I'm hesitant to pick it up. Anyone else have any other suggestions?

I'm in the same boat you are. I think I'm going to just wind up getting a Gamebridge. It's only $20 so it's not like it's a major investment. I too am interested in what the majority of ppl here use though, and if it is the Gamebridge please post your opinions of the product.

I just use my digital camera to record video. Then I just transfer the video from the memory card to my pc. Pretty straightforward and easy to do.

From what I understand from reviews of the Gamebridge, the lag issue isn't in effect when recording output - the video and audio are in synch. It possibly has more to do with the specs of the PC being used than anything else.

Does the Gamebridge require you to play the game on the PC screen? Or can you split the signal so that you play it on your TV but also record it on the PC? I'd much rather be able to play on the 57" HD than the 15" laptop...

There's nothing the Gamebridge could do that would prevent you from splitting the signal if you want to.
I've got a Canopus ADVC-100 box, a little external firewire thing that converts SVideo to a firewire DV stream. Got the thing years ago, to convert my library from VHS to DVD-R. At some point I plan to rig up a signal split on my XBox and record that way.
(Know what would be awesome to get in a patch? The ability to record performances on the console for later playback. Then you could play on a TV set with little/no lag, store the performance, switch to an AV capture box on a computer with tons of lag, and play back the performance without caring about it.)

I'm in the same boat- trying to find the best way to capture the performance...
It has to be external though because I'm using a laptop...
What do you use to split the signal? Does that degrade the quality? And is there some sort of an HD splitter (and some external device that will take an HD input)?

That looks really nice, and really out of my price range. :)
It's also not really portable.
