I would love to be able to bend notes on the guitar. Perhaps.. place the button on some sort of sliding axis. Bend a note here or there on a bluesy song, or add some vibrato to a hold. Maybe incorporate bends into the song, wherein the player must bend on certain notes. I thought this would add a little more interaction/fun to the game.

Just throwing this out there, I've always thought it'd be cool :D

That is a very good idea. I have actually thought the same thing. One way might be to make the fret buttons pressure sensitive like the PS2 buttons on some games. The only problem is there are probably folks like me who would hold the buttons down all the way all the time.

Your idea is probably better. Have the buttons so that they can slide up, but only when fully depressed. Add some horizontal ridges or a lip on the top edge of the button to help with grip.

Another thought I've had is to have notes that actually require the whammy bar. On GH and GHII you can play through any song without ever having to touch it. Of course it comes in handy when building star power on long notes, when I pump it furiously. Otherwise it does not add all that much to game play.

I have also wondered why there wasn't an open note/chord that requires you to strum with no frets depressed. I suppose it is because that is really not a note/chord in real guitar playing, but I may be wrong. Still, it would add an additional element of difficulty to the game.
