Check profile name in online games? XBOX 360

I was just curious about this. When I play against somebody online and it matches me up with them it says ??? as their name. But, the other day somebody said my name, GWARAndy. How on earth did they see my name when I can't see theirs? I see their character name, I think (?) right before the song starts, but to my knowledge I've never seen the profile name or whatever it's called. I just see the ???

Also, how do I go about blocking those idiots who are losing a match and leave it before it's over?

Two ways to do this:

1. Go to the Dashboard, and on the page where your friends and messages are, go to the right of friends and you'll get recent players, with the newest on top.

2. At the results page (I think), if you hit yellow, you'll bring up the See Gamertag dialog, and from there you can view the gamertags of anyone you're playing with right now (including yourself, which isn't all that useful).

edit: To block said idiots, open up their gamertag, and go to Submit Player Review (I think that's what it is), then you can specify positive/negative feedback and what type. If you leave negative feedback, then Live will try not to match you with that person.
