If I have a third-party plate installed on a drum pedal, and it snaps or, for whatever other reason, I need to RMA it, can I still do so? Or do the screw-holes I put into the pedal's surface somehow void some sort of warranty?

Thats pretty excessive. I'd still do it, but I'd submit it as a standard and take my chance rather than have them 125 if they think it's excessive damage. If your worried about it breaking after you have a plate installed, you might not have it installed correctly...
I submited a standard RMA and I'm about to replace a pedal that is broken in 3 spots, as well as the cord being cut/re-soldering back together. Looks like crap and I don't really expect it to go through but we'll see. Box hasn't arrived yet.

Well I've already done an express RMA, so that's out the window.

After rereading your post, I think you're confused.
It didn't break after the plate was installed, it broke, I sent away for the plate and the RMA, and the plate beat the RMA here. I want to get some playing in before I wait for the RMA to get here. When the pedal broke, it was entirely unmodified.

Well that doesn't matter. They look for signs of 'abuse', and depending on how your plate is installed that might constitute abuse. Having said that, I haven't heard of anyone having their their RMA denied.
You could always do this (www.youtube.com/watch?v=yS5gbIbcHJQ) with your broken one, like I did, while waiting for a new one to reinforce with that plate.
