The strumming down on my X-Plorer has become too sensitive. Very often it will register as two down strokes. As you can imagine, this makes doing well alot more difficult. Do any of you know of any ways to fix this?

I've taken apart enough Xplorers to know that's a pretty bad sign for your controller.
The switches in the Xplorer use thin metal contacts which bend to register each individual strum. The problem is that over time these metal contacts can get bent so much that they either break off or stick. Once that happens, the controller is effectively shot, because there is no reasonable way to repair or replace the defective switch.
Strumming sensitivity is usually an initial sign of problems in these contacts. Once it starts it can rapidly deteriorate into a far worse situation where the strummer is permanently "stuck" down.
If your comfortable with voiding your warranty and adept with electronics repair in general, open it up and check the strumming mechanism. Maybe it has simply come loose and needs tightened, maybe there's debris inside..
I've recommended replacement / warranty plans with every xplorer I've seen purchased... it's not a matter of "will it fail" but "when it will fail". I wish I had a better prognosis and I hope it works out for you. :(

Honestly when mine does that I just bang on the strum bar like 5 times and it works. Again that's me. :p

Everything can be fixed by banging on it.
