Final vocal encore should be Rainbow in the Dark or something else by Dio.

I don't mind Dio at all, really like most of his stuff, but Rainbow In The Dark is his worst song. Besides, I don't think he'd be THAT challenging to people who can sing.
I could be wrong though...

too easy? WTF? He goes scales up and down the scale in almost every word. There is no one who has even covered this song halfway decent. It is like one of the hardest songs to sing (like he does) ever!

On a side note their cover of It's the End of the World As We Know It "Their version is a minute and a half shorter than R.E.M.'s, yet still contains all the verses."

That's probably because he Axl sings in falsetto most of the time; it requires less breath to sustain a note. (Although that doesn't make him a less awesome singer; it's just a different style.) I agree with Wings' list, although I'd add Ian Gillan and Robert Plant as well. Both of them have some awesome vocal tracks that would be difficult to sing. I'd love to see Child in Time or Babe I'm Gonna Leave You as DLC.

So, generic country song for the final vocal? Please. JukeBoxHero is right. It's not that hard, he just changes pitch a lot. None of it seems particularly challenging, however.
In addition to WingsOfSteel's list (all of which are great), I'd like to add a name I think he would concur with...
