I wrote up a FAQ which is basically a quick-reference-guide for all the components shown in the video... but GameFAQs doesn't take submissions until the game's release. May as well repost it here.

Hometowns:
Amsterdam, Berlin, Boston, Chicago, London, Los Angeles, New York,
Paris, Rome, San Fran, Seattle, Stockholm
Attitudes:
Rock (rocker stage theatrics),
Punk (agressiveness),
Metal (evil/dark theatrics),
Goth (subtlety/sexy)
...female attidues seem more direct/expressive, guys just strum
differently. May be random animations within the set, though.
Weights: Female (thin/chubby), Male (thin/muscular)
Height: Will redistribute weight to make thick female = amazon,
and short female = fat.
Face Female:
Artsy (average looks, thin nose/lips)
Diva (thick pouting lips, round small nose)
Sprite (wider face, small features, vaguely anime?)
Runway (longer face, taller noise, pointed jaw)
Belladonna (heavier eyelids, fuller lips but not pronounced)
Amazon (stern nose, firm jaw, full lips)
...a decent array of them, could use more variations on normality.
Face Male:
Rocker (average looks)
Stone Jaw (squared out jaw, small features)
Touret (LONG face with long nose, looks like Iggy Pop)
Meat Head (squat and wide face, wide nose and jaw)
Baby Face (oddly large features on small face, big bulbous nose)
Iron Man (Ozzy? Wide/thick lips, semi-pointy chin)
...nearly every one is an ugly bastard except Rocker.
Note about hair colors; 'dyed' means it takes a secondary color for
some sections of the hair. Typical for punk/emo looks.
Hair Female:
Lolita (long, side tails with bows)
Long and Wavy (parted middle, long all over)
The Betty (Straightline bangs across forehead, long)
Anime Buns (Oval hairbuns)
Femover (Emo sweep over left eye, secondary color dip)
The Jacqueline (Parted middle, thinner, wispy curves at ends, long)
Layered (Wispy but thick and long, covers right eye)
The Joan (Short wild and messy, lots of strands clumped)
Feathered (medium and flared out, tiny wisps all over, parted middle)
Punked Out (Long ear tails, short otherwise, swaths flaring right)
Asymmetrical Bob (covers right eye with long dyed strands, short sides)
Bouffant (50's huge back beehive/ponytail, hair band)
Contrast Fringe (straight dyed bangs over eyes, short bob, spiky top)
Long Twists (royal curls / long curled locks)
Dreads (Dreadlock strands, done up in a bow back/top, some hanging down)
Dancing Queen (ABBA? long and fluffy over left eye, medium right side)
Dread Falls (dreadlock based twin ponytails, lots of secondary dip)
Long Pigtails (traditional twin ponytails, secondary dip straight bangs)
The Natural (giant afro, slightly spiky)
Trihawk (three finned mohawk, dipped ends)
Chrome Dome (Sinead O'Connor)
Curtained (ordinary/flat looking medium length, parted middle)
Long Hair (ordinary/flat looking long length, parted slightly left)
Short Punk (short cut hair, spiky patches back/top and bangs spiky)
Hippie Bangs (cord/ribbon tied around, sraight/medium all around)
Long and Straight (very ordinary long/straight hair)
Pageboy (long sideburns, short otherwise all around and helmety)
Short SPikes (short pyramid-esque spikes all over, helmety)
Side Ponytail (straight, pulled off to a righthand ponytail)
Little Pigtails (short, pointy bangs, two tuft ponytails behind head)
The Pixie (short, swept to right side with right side sticking out)
...pretty wide array. I can't think of any they missed here.
Hair Male:
Feathered (parted middle, strands wisp out on either side, medium back)
Tailgater (Long side strands, long bangs, short back -- or a mullet?)
Long and Layered (parted middle, fluffy with long strands, very 80s)
The Natural (Smaller 'fro than the female version, less spiky)
Long Twists (Identical to female)
Fauxhawk (hair brushed up in a mowhawkish point, one side is dyed)
Dreadlocks (Bob Marley, long and with many tufted up front)
Long and Wavy (Identical to female)
Mohawk (basic mohawk, very large)
Nightcat (80's large hair, swept to right; headband tie trails to left)
Glamtastic (HUGE 80's hair, puffy and medium length)
The Quill Pig (Many long, thin punk spikes)
Squeeb (three long trails cover left eye, dipped; short and spiky)
Hair Metal (more 80s... dyed dipped thick strands, covers eyes)
Wild Curls (thick curl based afro, less spherical)
Crazyhawk (Secondary dip sides, brushed up to many wild strands up top)

Curtained (Identical to Female)
Long Hair (Identical to Female)
Shaggy Hair (Shaggy from Scooby Doo but less puffy and short in back)
Sleek Mop (very beatles)
The Quiff (vaguely spiky up top but not as punk as the others)
Bandanna (Full bandanna wrap around hair, long thick strands otherwise)
Lazyhawk (shaved on the left side, swept to the right, dye in front)
Short Punk (Identical to Female)
The Mop (Even more beatlesy, a bit thicker and slightly longer in back)
Ziggy's Mullet (Mullet with weird pointy strands up front and top)
The Emover (Emo hair, combed forward almost over eyes, dip strands)
The Pompadour (Basic rockabilly hair, short in back, seems)
...way too much 80s and punk. And that's without sharing many with female.
Hair Colors: Various purples, blues, greens, full grayscale range, normal
brown/red/blonde not shown but likely. May vary depending on innate
craziness of hairstyle.

Is there no facial hair? I could swear I saw it mentioned at some point awhile back. Gotta have facial hair in there if you want to make your Norweigan Death Metal guy.
Or if you want to make Courtney Love.

Facial hair, glasses, and hats are all purchasable accessories. You can see it in the latest blog post as they go shopping for beards.
