They should have a controller there... That's the only way to navigate the mic.

Yeah, out of the 3 BB's I went to, only one had it hooked up with a controller.

you have to convince an employee to plug a controller into the 360 so that the mic has the ability to use the menus

yes, you still need to be able to press "a" on the controller to get in.

I've used it multiple times at my BB, but I'm about the only one who has figured it out. I remembered before they put the RB demo in, there was a 360 caged up with a wireless controller which was and is used by the RB demo. So, when I came to BB, excited to try everything out (yeah, even the mic:p ), it took me a few minutes to realize why the mic wasn't working. Duh! So, I slightly lifted up the cover over the 360 and wires and such to see where the controller is in the cage so I could press the 'X' button to sync the controller, 'A' to join, and navigate to different difficulties. I had to do that every time we started up again so, after every night I went to BB, my arm was all scratched up from squeezing my arm behind the cover. So, since I left in on every time I went, it ran outta batteries, so, no more mic for me, or anybody. But, it was semi-fun while it lasted.:D

Oh, and about the convincing an employee to take the controller out...asked a few times and every employee told me that nor they or the managers have a key to the cage. LIES! :p

I did the same as drummer. I found the microphone all bound up behind the display so I reached into the setup and plugged the mic in. There was also a controller there so I turned it on and was good to go. I had to be sneaky about it.

I had to be sneaky about it.

Yeah, funny, 'cause I just casually reached in the back and turned on the controller and such and, luckily, no BB employees ever walked by to see me do it. Usually, I have the worst luck in the area, but, it was for RB. I dunno, it's like RB was protecting me or something. RB's like my Sloman's Shield. :p
