if i play BWT on singing easy, guitar easy
will i still be able to unlock / experience everything ?
or is there some requirement to play on a higher level ?

Almost. There are side "quests" that require you to sing on harder levels but you don't have to do them.

People may be assuming that, based on the fact that you couldn't earn cash in GH on easy level. But with the emphasis on the group dynamic, they may have done away with that, to make it more accessable to the less hardcore gamers without gimping the hardcore gamers' ability to earn cash and unlock unlockables.
