With the PS3 Les Paul not looking likely to work with Rock Band, and the Strat not working with GH1/2/80s, my reasons to get Rock Band (and GH3 for that matter ><) on the PS3 are gone. I'm thinking of going to ask the local Gamestop if I can get my pre-order switched to the 360 version, since I can get an Xplorer (and if I want, I can pick up GH2 for the 360, and download the GH1 songs, I'd just be missing the GH80s songs, which, while I love 'em, aren't critical). Do you think they'd be willing to do so, this late in the game? This may depend, of course, on what they have for stock.
Now, if they can't do that for me, here's another possibility that occurred to me. Hit the local Best Buy midnight launch (conveniently, it's in the town where I work, and I get off work at 11 :D), and pick up a 360 copy, plus an X-plorer. If I did that, would Gamestop let me cancel my pre-order on the release date (presumably, I can cancel up through Monday, but I'd rather wait until I have my hands on a 360 bundle, lest I find myself up no-rock-band creek without a paddle)? I'd even be willing to transfer my pre-order deposit to another game (say, Smash Bros or something), I just don't want my $25 to go down the drain. If anyone around here works at Gamestop, I'd appreciate your info on my options here. Thanks!

First, your deposit will not go down the drain no matter what you do. It is your money and you can get it back whenever you want. Now if your deposit was made of trade in credits you will have to accept trade in credit in return, etc. Transfering it to SSB should be no issue regardless.
Now, as to transfering it over to the 360 version, good luck. If the store happens to have an extra 360 version they will be happy to help you out. However, at this point in the game most stores have already recieved the games and only have bundles to match their pre-orders. Call your local store and see if they have extra either way.
Lastly, I think you are being a lil' paranoid about the PS3 version, but do what you like.

If you demand that your $25 be refunded to you, they have to do it. They won't want to do it, and they might tell you that they can't, but if that happens, ask for a manager and get your money back.
If they still refuse, ask for the contact information for their district manager and take it up with that person.
It might take a bit of pushing, but you can definitely get your pre-order cash back.

Have you thought about just getting a refund? I don't think it matters if you cancel before Monday or not. Just go up there, pay for it, then get your money back. It's not like they will care. You know people are going to be coming in all day asking if they have any. They will have no trouble selling it. I called my GameStop today and they said they only have enough to fulfill the preorders. Hopefully they mean 100% of them since I have mine pre-ordered there.

Well, the decision isn't solely based on the Les Paul's non-functionality. The fact that I can play GH2 and GH1 songs on the 360, and not on my PS3 (*tear*), is also a factor here. In any case, I think I'll wait until Monday, when IGN said they'd test the PS3 version to make sure. The only disadvantage to getting the 360 version, really, would be that I'd almost certainly never be able to play online, because I balk at the idea of paying for Xbox Live.
