I can't believe that there weren't any songs from these bands in Rock Band, so my set list would consist of these songs:
Led Zeppelin:
Whole Lotta Love
Heartbreaker
Immigrant Song
Communication Breakdown
Rock and Roll
Black Dog
The Ocean
Living Loving Maid (She's Jus a Woman)
Trampled Underfoot
Van Halen:
Runnin' With The Devil
Ain't Talkin Bout Love
Romeo Delight
Dance the Night Away
Unchained
Beautiful Girls
Everybody Wants Some
Somebody Get Me a Doctor
Mean Street

Led Zeppelin: Immigrant Song has one four-second riff over and over for guitar/bass with no solo, and the drums are just as repetitive. It'd be fun for vocals, but the rest of the song wouldn't translate well to Rock Band at all. Every other song is either a pretty good choice or an awesome choice.
Add Ramble On, Dazed and Confused, Good Times Bad Times, and The Song Remains The Same.
Van Halen: RWtD, ATBL, DtNA, and Unchained are great songs. I haven't heard the rest. It could use Hot for Teacher, Panama, And The Cradle Will Rock, and Jamie's Cryin'.

Needs Hot For Teacher, Panama, and Dance the Night Away is a great choice. Running With the Devil has terrible bass. As much as I love that song, it wouldn't work, unless you were playing with a 3 year old on bass.

Don't discount that... my 8, 5, and 4 year olds all had to try out the drums today and really want to play the guitar, too :p

Nobody listens to Van Halen for the bass, and I wouldn't play the song in Rock Band for the bass. Michael Anthony is no John Entwistle that's for sure.
Oh and these songs were just off the top of my head, bottom line is I just want to play something by Led Zeppelin and Van Halen in Rock Band.

Hot For Teacher and Moby Dick would be really good for drums.
