I played 2 songs on expert with the 5 gold stars come up, but no achievement?! What gives? And, yes, I was signed in with my gamertag.

Were you signed into your gamertag on the instrument you were playing? If you were signed in on the drums, but playing guitar, then you wouldn't get it.
