I've kind-of found one for the drums. In the first drum tutorial, during the sound check, as long as you dont hit ONE of the pads 5 times, you can continue playing the other pads as much as you like. So you can bust out rhythms on the snare, kick, closed hi-hat, and crash. It's pretty fun, unfortunately after a few minutes it kicks you off and says you failed.

I'd love if it just had a mode that let you keep going and not have to sit through the talking every time.
