    Yeah, I keep offering to test if someone would buy me a 360, RB3, and sponsor me. Strangely, it hasn't happened ;)

    But yes, it's mostly watching, with some occasional playing. I know my biggest problem would be testing pro keys, as I really don't know what I'm doing there, but I could test everything else. It doesn't require you to be awesome, just good enough to understand how things should generally be charted.

    And you don't have to test everything in playtest. It's actually advisable you don't, just focus on one or two instruments instead and get really deep down on them, know them inside and out.

    I would also like to point out that being good at playing an instrument doesn't necessarily equate being a good tester for that instrument and vice-versa, you don't need to actually play a song at all to playtest it well.

    A good ear for pitch (being able to tell whether a note is higher or lower than another note will do, not necessarily being able to tell the precise pitch of a note just by hearing it (although that would be a big help)) and a very basic knowledge of note timings (as simple as knowing about 8th notes, 16th notes, triplets, etc) is what you need, not guitar skill.
