I totally see where you're coming from. Just as there are casual extremists, there are competitive extremists as well. I won't defend them. Forcing someone to enjoy something a certain way just isn't cool. Everyone should be able to play the way they desire, just as long as it doesn't personally affect anyone else (like online cheating). I love the Smash series too, and just having this discussion shows how great it is since it allows for a unique player experience. Although it's fun with all the frantic chaos is on, I personally enjoy it the most when items are off, even fields are chosen, and friends are to be challenged. If someone wants to play with me a different way, then sure! I'm not close minded, and ironically my favorite stage in Brawl is Spear Pillar (which is totally random and chaotic). As for the tournament, that's the way to go. If you don't like the rules, then it's best if you don't participate. Maybe even make your own tournament! There's always room for both casuals and competitive players.
As for your final statement, that is a whole different topic in itself. I'll leave this quote though:

Playing through Sakurai's games, you see the artist behind the games and observe a glimpse into his personal philosophy. Kirby was made so "anyone can beat it" regardless of skill level. Smash revolved around shortening the gap between a newbie and a veteran in a fighting game. This quote also says a lot about his philosophy. As much as I respect Sakurai, I personally find that this logic can not be completely integrated into a genre as competitive as the fighting genre. Smash revolves around duking it out between 2 or more players, and there's ALWAYS going to be winners and losers. That is something that you can't avoid. Yes, you can use this philosophy to invite new players in. Yes, this philosophy has been met with great success and profits. However, this philosophy won't fly for those who want to be able to fight in a competitive environment. There is room to make everyone happy (look at Melee), but when you INTENTIONALLY go out of your way to induce "mechanism of accidents occurring, balanced so that the game's progress and results falter easily" then something's wrong. I find these strict rules beneficial, because they don't affect anyone who doesn't play by them and they are able to constantly change to benefit the community. This is BEST BEST BEST shown in the Pokemon competitive community, where people keep saying stuff like "If Double Team is OP, then Game Freak would have removed it!" It may seem elitist, but Game Freak can't hold a candle to game balance as much as the Smogon community can. Which is understandable. GF never claimed to make a perfectly balanced game (especially when you have THAT many playable Pokes, one's bound to be better than the other), and they don't have the resource of unlimited time for competitive testing (which won't amount to sales). One could say the same for the Sakurai, especially with his philosophy.
And this is Nintendo we're talking about. What are these patches you speak of? :P

I think it's the whole Landmaster thing was what made people so angry. I know it ticked me off a bit. And the thing is, when I wished Toon Link to get into Brawl, I kinda imagined him... differently, ya know :P

I won't deny Wolf having a Landmaster being a total cop-out. I kind of imagined a Wolfen summon or something. Or possibly get assistance from his team a-la Corneria Arwing style? Something like that, at least.
I thought the way they made Toon Link was rather interesting. His being had a completely different set of physics from Adult Link (which is one of the things that made him better).
