I personally love the "Tupelo Honey" album. One of my all-time favorites, and I would suggest it as a starting place. "Moondance" is his most popular, and a very good one, but in my opinion, nothing beats "Tupelo Honey". For his early more experimental work (probably a bad way to describe it) I like the Bang Masters compilation.
