I know the RB controllers are the exact same between PS2 and PS3, and thus work on both.
It does work but I heard that it has a little lag. Nothing a little Calibration can't fix I guess.

I have two of these for my PS2 guitars and they work great for RB and GH except for a couple little oddities. In Rock Band to activate star power you can't be hitting too many notes, so you have to wait for a break sometimes or use the select button. For GH you have to hold it vertical for 1.5 seconds. These are minor inconveniences, IMHO. But I also mainly play drums at this point.
I haven't noticed any lag, but the absence of the effects switch is noticeable. It always seems to be stuck on echo, but random button presses will flash the effects menu at times. Despite these minor flaws I highly recommend them if your PS2 guitars are in good shape. The adapter also doubles as an adapter for your PS2 Dualshock controllers for use with the PS3.
DO NOT get the PS3 Les Paul.
PS3 Les Pauls suffer from extreme amounts of variable lag. I went through 3 Les Pauls trying to find a good one, same problem with all of them. They drop strums like nothing else due to faulty wireless dongles. The lag isn't callibrateable since it varies, getting worse in faster songs.
I eventually just took the neck off of my Les Paul and attached it to a Nyko Frontman, giving me the awesome frets of the Les Paul on the solid body and clicky strumbar of a Nyko Frontman.
An alternative is also the GHWT guitar.
