I'll totally buy Hungarian Dance No. 5 and Flight of the Bumblebees when they come to PSN.

The last parts of the William Tell Overture could be a lot of fun, maybe just a bit of the Ranz des Vaches to serve as an intro, but mostly the recognizable and energetic Finale portion, it's easy to imagine that in Rock Band.

Ride of the Valkyries and Beethoven's 5th would both be great. I'd also get a kick out of Richard Strauss's Also sprach Zarathustra.

My pet favorite classical song is Mozart's Sonata for Two Pianos in D major, but I don't know how well that would translate, since I don't think the charting standards would allow for guitar and bass to be charted to two equally complex piano parts, but if you could do that it'd be pretty cool. I also don't think it's quite as well-known as some of the other pieces mentioned here.
Also, yeah, Canon in D. While I would definitely love to have Canon Rock on here, that arrangement belongs to JerryC, and I'd prefer to have his recording for that version anyway... If the Fauxharmonic did a version I would expect it to skew more toward the traditional side, and I would definitely still buy it and love it.

if we're going to have choirs involved, what about "Hallelujah" from Handel's Messiah?

Would be a killer for vocals, maybe even one of the hardest songs.

If Fauxharmonic really wanted to they could add what would probably be the hardest vox songs in RB, Mozart's Queen of the Night aria (everyone knows this one....wait till about 45 sec in, you've heard it before), Habanera from Carmen (arias from Carmen have been announced by Fauxharmonic, no specific titles yet though) and Verdi's La Donna e Mobile come to mind

I just got myself all sorts of excited, the possibilities are pretty amazing

speaking of Mozart! "The Marriage Of Figaro"

I was just thinking to myself earlier "the beef song" and there it is in related videos

I recognize those songs you posted, they would be killers on vox!

Just played the classicals. They're hard and tough, but funny. Me and the other band players enjoyed them.

I would absolutely buy any of the pieces in broncosfan's post if Fauxharmonic did them.

Also, I'd love to see anything from Stravinsky's ballets.
