I'm trying to install the new software for my iPod touch and I've been on the "Backing Up '... ...'s iPod'" pop-up screen for hours and right now the bar looks like it's at 5%.

I did it for my iPgone 3GS and it took about 4 hours.
If you have a lot of stuff and never sync your ipod, then it will take a while to back up

Yeah, I can't install iOS 4 on my iTouch, but backing up my 8GB device can sometimes take 2-3 hours. If yours is larger... good luck.
All I know of recent stuff was installing Android 2.2 on my Nexus One, which took about ten minutes (and that was from downloading it from XDA; like I'm going to wait for an OTA...).

On my 32GB iPhone 3GS, it took about 20 minutes total. But then again, I did a backup/sync almost nightly on it, so the backup portion didn't take very long.
