It's one of the hardest songs I've ever played, and I 5 starred it.
Kudos to you.

Um...no, it can't. Even if you can (eventually) play something, it still remains awkward if you perceived it as such beforehand. If Time No More was one-tenth its actual speed, it would be playable by just about everyone, but that doesn't change the fact that the chord changes are more difficult than usual for RB charts. Which is okay, if people want awkward and difficult charts (NOT the same thing at all), why not give them what they want? But in that case, you have to come to grips with some other people heartily disliking the chart. And if you dislike it, chances are, you won't want to waste your time practising it, doubly so on a game, something designed to amuse and pass time.

This may be your attitude, but that doesn't mean it's Ol Drake's attitude, considering that he presumably wants people to actually enjoy playing his music in Rock Band.
If people aren't enjoying the chart, it's in his best interest to find out why people aren't enjoying it. In this case, it's because, although the chart accurately reflects how the song is played on real guitar (including the difficult), most people find it incredibly awkward and frustrating to play, and either don't want to practice the song, or still find it awkward after practice.
Should he do things differently in the future, to make charts more fun, even if it makes them less challenging and/or accurate? That's up to him. But I think it makes sense for him to be fully aware of the choices he's making and how people feel about them. He's approaching this mainly as a guitar player and not a Rock Band player, so it may be useful to him to hear how it feels to play his songs on Rock Band from people who don't play real guitar. If people don't like some aspect of his chart, then it's good for him to know what and why, not matter what the reason they don't like it is. He always has the option to decide that the reason people dislike the chart isn't important enough to him to change it, but he should at least know the reason.
(People who just say "this chart suck" without going into details are not being useful and this doesn't apply to that.)
Personally I find a challenge to be fun, but that's just me

Yup. Very likely. This is wrong - how, exactly? Looking down on people who want to continue enjoying RB as a game rather than an instrument trainer a bit, hmm? I know quite a lot of people who play guitar who have never progressed to the stage where they could begin to start shredding with the best (or even the worst) of them. Am I not playing an instrument "right" if I'm content with remaining, say, at the Ramones stage of development instead of making the massive commitment necessary to advance to Metallica level?
Though I actually believe that people with that attitude, as you like to call it, will not pick up Pro in the first place. It requires special equipment for guitar and bass, which means a lot of people won't even start on it. Same for drums, though the required equipment is an add-on rather than a completely new controller. I can't judge keys, since I'm prejudiced here (long-time piano player), but at least you can switch to Pro with the exact same controller you use for regular gameplay.
