The only reason in the real world is Pay-To-Play. Small-time bands sell tickets to friends, then take the money to the bagman the pay-to-play company or venue has. This makes more money for the pay-to-play company than the band.
This wouldn't explain bigger bands having to do this.

Personally I think that you should start out playing in your parent's garage, perhaps with a friend or two. When you scored well enough with an instrument to graduate from that you could either post ads looking for people to audition or answer ads to audition to be in other people's bands (the band leader path would have a different set of challenges). You band would start out playing minor gigs, weddings and Bat Mitzvahs and birthday parties. After a little of that, some guest at one of these would invite you to play in his dive bar.
As your career progressed, you might make bad decisions and have set backs, or flourish. As band leader you'll have to deal with members dropping out or checking into rehab. As either leader or member, you might be approached with offers to do solo projects or to dump you current band altogether. Etc, etc, etc to as much depth as possible. I think that it'd be a lot of fun to play a game like that.

And...what's the downside to band members leaving? They're not gonna cut out the audio for a stem for 'months' while you wait for a replacement, nor will they prevent you from playing while you find a replacement.
