Mine is Before I Forget by Slipknot on Expert Guitar. I still don't know why it's still that to this day. I had a higher leaderboard rank on Du Hast. I still don't know what calculates your signature performance. It's not leaderboard rank + amount of people that played the song like it is with Best Song Performance.

I checked when I posted to make sure I was correct. Sometimes, it takes a while after you play a song for it to show up as signature performance.

Edit P.S.: There were a couple times I played offline, too, which may have skewed some of the times. I am fully aware of how profiles work and that everyone's signature performance can be viewed with a click. I would not have lied about it when I posted.
