When I first learned alternate strumming, it was because of need rather than by choice. Back in GH3 with songs like "Holiday in Cambodia" and "Knights of Cydonia," when I got up to expert or even hard, I just had to suffer until I got it down.

Try bass on expert instead, or a few guitar songs on expert.

On guitar, Eye of the Tiger is great, having such a well known and pronounced rhythm, it's easy to practice on expert (even if you're normally a medium/hard player).

On bass? On expert, songs like Alabama Getaway and Go Your Own way are perfect for this, but there are a ton of 8th note bass songs that can work for practice.

I highly recommend playing Bass to get this down. It's a good transition to using orange and the speed of the charts without throwing confusing chords or tough solos at you for the most part. It's how I made some impressive steps up from medium to expert guitar.

    this ^

if you play songs on medium/hard then you're usually going to get random pauses in between a line of notes. which would make it easier if you're not alt-strumming, but make it slightly harder if you are.

its easier to learn how to do just one line of the same note while alt-strumming (as bront mentioned eye of the tiger is pretty good for this) and then later learn how to alt strum with random(ish) pauses in it

To elaborate further, Eye of the Tiger is the first song I ever successfully alt-strummed in. I picked it at random on expert, forgetting the speed, and just said "Screw it, I'll try alt-strumming". Despite expecting horrible results, it turned out well, mostly because I knew the rhythm well.

Love Like Winter by AFI is all alt-strumming on guitar. As is Too Little Too Late by A Skylit Drive.

Also, A Jagged Gorgeous Winter has an alt-strum section, and it was the first I learned to alt-strum with.
