Wabi-Sabi by Sky Pie. Got it. Thanks! Anything else?
edit: Oh God, that was glorious. I tripled my Blitz career score in one song. Please, I must have more!

I think Moonlight Sonata, and some of the classical stuff.
Edit: Look for stuff by Thomas Walker.

Drums:
- "Drum Exercises for the Sufficiently Masochistic" by Shylo Elliott (demo | full song)
- "Indulgence" by Self-Titled (demo | full song)
Guitar:
- "Far Wanderings" by Shylo Elliott (demo | full song)
- "Upstream" by Cory Wong (demo | full song)
Vocals:
- "Song of the Century" by Green Day (export from Green Day: Rock Band)
- "Halftime" by Freen in Green (demo | full song)
Keyboard:
- "!I" by !I! (demo | full song)
- "Bagatelle No. 25 - Für Elise (Beethoven)" by Thomas Walker (demo | full song)
- "Piano Sonata No. 11 - Ronda Alla Turca (Mozart)" by Thomas Walker (demo | full song)
- "Piano Sonata No. 14 - Moonlight Sonata (Beethoven)" by Thomas Walker (demo | full song)
- "Wabi-Sabi" by Sky Pie (demo | full song)
Half of the Thomas Walker stuff have 2 tracks (bass and keyboard), but everything else with 1 track (keyboard only) released to date are listed above.
For a really NICE score, try playing "Piano Sonata No. 14 - Moonlight Sonata (Beethoven)" with Pinball Notes. ROTFL! The music doesn't even match the action going on with the pinball bouncing around so fast.

I'm running out of escalating hyperbole here. I thank you for your great service.
Play We Will Rock You by Queen. That song has NO bass whatsoever, but they added bass to it anyhow. Same with guitar. Except for the solo at the end, there is no guitar. The majority of the song consists of drums and vocals. The guitar and bass notes mirror the drum notes. Very unrealistic!
"Toast (Live)" has two tracks, but they are almost never simultaneous.
EDIT: Don't forget "Drum Exercises for the Sufficiently Masochistic"
