If I got a PS3 Mustang and a PS3 instead, could I play PS2 RB/GH games? :P
The GH drumset has a MIDI-in which allows it to convert MIDI signals into notes, the way the Pro Adapter does, but it doesn't output MIDI signals naturally on its own.

As for the Mustang, it only works in basic mode because RB3 knows how to make it work in basic mode (much like how RB3 can turn any MIDI keyboard into a GRYBO keyboard, which can also be used to play basic guitar charts). You wouldn't be able to play older RB games on it.

That's right, to use the GH:WT drums. I believe all the drums for all the games after that as well. You take your other drum set (such as the DM6 or DD55 etc) and have it output on MIDI channel 10. Then take the MIDI out from that drum set and plug it into the DIN5 MIDI IN on the GH set. (Such as with this male to male din5 midi cable if the other set has that kind of output.) Then you play on the other set, and the GH set sends it to the console, working as an edrums to console interface. (There's posts showing how to take the module out of the GH drums and do away with the drums themselves.) The MIDI assignments that the GH set should use red snare 38, yellow hihat 46, blue high tom 48, orange crash 49, green low tom 45, bass 36. There's other posts on that as well.

Guitar Hero: Warriors of Rock bundle has the latest version of its drum set which includes a detachable MIDI interface intended just for this purpose.
