I was watching the vocals chart for "What I Got" on YouTube and they censored "motherf***ing" to "mother-mother". That makes no sense whatsoever...

Censoring is a confusing thing when it comes to Rock Band. Another example I can think of is that Jerry Was a Racecar Driver didn't censor "god damn", but that one Panic at the Disco! song we got last December did. Originally Posted by M_Robbins5

There are a few other inconsistencies with censoring including the examples you gave. East Jesus Nowhere also has god damn uncensored. What I Got and The Kid's Aren't Alright have pot uncensored, but it's censored on Captain Jack. Originally Posted by Mileycyrussoulja
