Recently I posted a thread like this for MGS boss battles, but when I searched for a thread discussing boss battles in general, I couldn't find one, so I decided to start one myself.
Here are some of my favorites:

Kefka from Final Fantasy VI (even though I've never played it)

You need to do yourself a favor and correct this. FFVI is a must-play.

Kefka is one of my favorite boss battles in gaming. It's a really long, but super satisfying JRPG boss battle. And one of the best final boss themes in gaming.

You need to do yourself a favor and correct this. FFVI is a must-play.

Yeah, I know. I'm planning on picking up an SNES, an N64, and a Gamecube and a pile of games and FFVI is on that list.

If you have a GBA or DS Lite, the GBA version of FFVI is (arguably) better.
