I have noticed that the note chart scrolling speed will differ from song to song based on the BPM.... only exception was BBF

This is untrue. It just looks that way because the measure lines are more spread out on slower songs.

Hyperspeed makes the game easier in a good way. Your fingers still have to move at the same speed to hit the notes. It's just easier to tell the notes apart in fast sections.

The only reason you're missing Rock Band notes is because you're used to the timing window in GH. If you played Rock Band more, you'd get used to it and you wouldn't miss so many notes because of the timing window.
