Another question about upgrading PC's. Keeping in mind my main goal is The Witcher 2, what looks to be a very high-performance game, will I need to buy two graphics cards? I know a lot of people use dual graphics cards, although researching it a bit, it seems to just help frame rates out a bit... I've never been too nitpicky.
I suppose I could also use the new graphics card in conjunction with my current 7900, but I don't know about compatibility and all that. All in all, I'd really like to spend less than $600 or so, video card, CPU and RAM, if at all possible.
On the same subject, I really want to play Planescape Torment. I hear it's very good.

Hybrid SLI only works with GPUs past the GeForce 8xxx series... the 7900 won't do anything for you there. Honestly, though, the only time you need SLI is for running extremely high resolutions (or multi-monitor) or very high antialiasing settings (or both). A mid-upper-end GPU (something like a GeForce 570 or a Radeon 6970) will run basically any game currently on the market maxed out at 1920x1200 with 4x antialiasing without any issues.
As for The Witcher 2, it runs almost maxed out (only disabling motion blur and ubersampling) on my desktop, which only has a single Radeon 4850. While not a game that does well with low-end hardware, The Witcher 2 is surprisingly not that punishing to PC hardware.
Official forum economist. Explodes when thrown.

Well, for hardware earlier, you recommended me a MSI N560GTX-Ti Twin Frozr II eForce GTX 560 Ti. I originally thought that was two cards. This is what you recommend, isn't it?
I'd like to upgrade enough to not have to do it again for a few years, at least. Also, while I'm asking questions, doesn't extra RAM speed up your computer in general? I find my computer lags often, even with simple things like browsing the internet. It's got very low RAM, though.
