    Indian Lentils with Garlic and Onion (Masoor Dal)

    Recipe ingredients

    * 3 cups water
    * 1 cup split red or brown lentils, washed and drained
    * 1/2 teaspoon ground turmeric
    * 1/8 teaspoon cayenne pepper, optional
    * 3 tablespoons vegetable or peanut oil
    * 1/2 teaspoon whole cumin seeds
    * 3 cloves garlic, finely chopped
    * 1 medium onion, chopped
    * 1 teaspoon salt

    Instructions

    * Combine water, lentils, turmeric, and cayenne in a large saucepan or kettle and bring to a boil over medium-high heat. Cover pan, turn heat to low, and simmer for about 30 minutes, or until lentils are tender. If you are using split red lentils, they will cook in about 15 to 20 minutes.
    * Meanwhile, in another saucepan, heat oil over medium heat. Add cumin seeds and stir. Add garlic, onion, and salt and continue stirring for about 5 minutes, or until onion begins to brown.
    * When lentils are cooked, add onion mixture to them. Mix well and simmer for 5 additional minutes before serving.

    Southern Style Cornbread

    Dry ingredients:
    1 cup finely ground cornmeal
    1 cup plain flour
    2 teaspoons baking powder
    ½ teaspoon baking soda
    1 Tablespoon sugar
    ½ teaspoon salt

    Wet ingredients

    2 eggs, beaten
    2/3 cup buttermilk
    2/3 cup whole milk
    2 Tablespoons unsalted butter, plus extra to grease pan

    Directions

    Preheat the oven to 425 degrees.

    1. Grease a 9 inch square baking pan with melted butter. Place in the oven to heat.
    2. Combine the dry ingredients in a large bowl, mix well. Combine the wet ingredients in a separate bowl and whisk well.
    3. Make a well (hole) in the middle of the dry ingredients.
    4. Pour the wet ingredients into the well and gently fold the dry ingredients in from the side. Do not overmix.
    5. Spoon the batter into the hot pan. Bake in pre-heated oven (425) for 20-25 minutes until golden brown and done.
    6. Turn onto a wire rack to cool slightly. Serve warm.

    Pfffft for real southern style cornbread you best be cooking that in a cast iron skillet :P. Still any cornbread is better than no cornbread. Mmm cornbread.

    i like jalapenos in mine too, though i figured i'd give the wimps some more "safe" food.

    and yeah, a cast iron skillet definitely wins bonus points.

    Hollowed Apple Sorbet

    Ingredients

    2 Granny Smith apples, divided
    2 tablespoons fresh lemon juice, divided
    1 tablespoon white sugar
    1/3 cup apple juice
    1 drop green food coloring
    Mint sprig (for garnish)

    Directions

    Peel, cut and core 1 apple; place in saucepan with 5 teaspoons lemon juice, sugar and apple juice; boil approximately 3 to 5 minutes or until soft; cool; puree in food processor until smooth, transfer to a small bowl. Stir in food coloring; freeze. Puree again in food processor and return to freezer.

    Cut top off remaining apple, set aside for a garnish. Hollow out inside with a melon baller leaving a 1/4-inch wall. Sprinkle remaining 1 teaspoon lemon juice on the apple lid and inside of the apple to keep from turning brown.

    Fill hollowed out apple shell with sorbet, lean apple lid against the shell; garnish with a mint sprig.
    Vanilla ice cream can also be served with this sorbet.

    Say, for the Thai Beef and Basil (spicy)..
    The chili sauce: Sweet Chili or Hot Chili (i.e. sambal oelek or similar).

    Great thread though; good recipes are always good.
